Pineapple Casserole (side dish)

Ingredients

1 (20 oz) can pineapple chunks

1 (20 oz) crushed pineapple, drained

2 cups shredded sharp Cheddar Cheese

½ cup white sugar, to taste

1/3 cup all-purpose flour

40 buttery round crackers (such as Ritz), crushed

½ cup butter, melted, or more or less to taste

 

Directions

Gather all ingredients. Preheat oven to 350°.

Drain the can of pineapple chunks, reserving ¼ cup of the pineapple juice to use in this recipe. Discard remaining juice or reserve for different use.

Transfer drained pineapple chunks and reserved ¼ cup juice into a large bowl. Add drained, crushed pineapple, cheese, and flour; mix to combine. Pour into a 1 ½ quart casserole dish. Mix cracker crumbs and melted butter in a small bowl; sprinkle over pineapple mixture. Bake in preheated oven until golden brown, about 30 minutes.
